La primavera»» bella stagione «« ma purtroppo non per me ☹

Eh sì, è arrivata la primavera da un pò e me la sento già dal primo giorno! Al contrario degli altri vorrei saltare questa stagione visto che devo stare male e non mi godo le belle giornate di sole e la rinascità della natura. Sono allergica alle graminacee e mi sento così sfortunata perché mi sono trasferita della città alla campagna per stare bene!!! Comunque, non vorrei neanche drammatizzare la facenda. Quest' anno ho peggiorato, almeno mi sembra così. Ho continuato a tossire giorno e notte ed ogni cura non sembra funzionante. Sono stata così male che ho cercato su internet qualche consiglio o qualche cura che magari al mio medico non è mai venuto in mente. Chissà perché non ho fatto prima queste ricerche! Non ho mai saputo che stavo mangiando i cibi che mi dovrebbero fare bene (e che mi piaciono pure) ma invece non lo è! Dunque, copio qui qualcosa tra tante le mie nuove scoperte:

Gli allergici ai pollini (in Italia sono circa cinque milioni) non devono solo temere questa o quella pianta in fase di pollinazione ma fare attenzione anche alle cosiddette "cross-reattività".
Ovvero alle allergie che alcuni pollini possono scatenare in chi ingerisce certa frutta e verdura. 

Chiediamo il perché a due esperti di Humanitas, la dott.ssa Lucia Testoni e il dott. Massimo Giorgino, specialisti in Allergologia e Immunologia Clinica, presso l’Unità Operativa diretta dal dott. Michele Ciccarelli.  

"È frequentemente rilevata una cross-reattività tra pollini di alcune famiglie e vari alimenti vegetali”, spiega la dott.ssa Testoni che precisa: “Il contatto con alcuni alimenti vegetali in pazienti allergici ad alcune famiglie di pollini può determinare una sindrome orale allergica con fenomeni irritativi a labbra e cavo orale: il sintomo più comune è rappresentato dal prurito al palato, ma può comparire anche gonfiore delle labbra, fino ad edema della glottide. A volte l’ingestione di questi alimenti vegetali cross-reattivi può provocare anche manifestazioni cutanee o respiratorie come ad esempio asma bronchiale. Sono stati descritti anche casi di choc allergico. Tra le cross reattività più frequenti quella tra mela e betulla che si osserva nel 30-70 per cento dei pazienti allergici a pollini di betulla”.

"La sindrome orale allergica si manifesta pochi minuti dopo il contatto con alcuni alimenti vegetali", aggiunge il dott. Giorgino, "e si osserva in otto-dieci pazienti allergici a pollini ogni cento". È utile quindi che chi è allergico ed ha manifestato fenomeni di cross reattività conosca i "legami" tra piante e alimenti vegetali. I più noti sono questi:

- pollini di graminacee crociano con frumento, anguria, melone, limone, arancia, prugna, pesca, albicocca, ciliegia, kiwi, mandorla, pomodoro, arachide;

- pollini di parietaria con gelso, basilico, pisello, melone, ciliegia, pistacchio;

- pollini di betulacee con mela, pera, fragola, lampone, prugna, pesca, albicocca, ciliegia, mandorla, sedano, finocchio, carota, prezzemolo, kiwi, arachide, noce, nocciola;

- pollini di composite con miele di girasole o di tarassaco, camomilla, olio e semi di girasole, margarina, dragoncello, genepy, lattuga, cicoria, sedano, finocchio, carota, prezzemolo, anguria, melone, mela, castagna, pistacchio, banana, arachide, noce, nocciola. 
 
E queste sì che sono delle belle scoperte. Dunque, devo evitare tutti gli alimenti buoni e gustosi della stagione. Mi sa che perderò un pò di chili........

Ora cerco di stare meglio e mi fermo qua. Spero di avere qualcosa di più allegro o qualche ricettina simpatica da pubblicare, perché no?

Thai New Year's Day, Apr. 14th

I lately had a pause in the blog, having so many things to keep up with each day, but I did find time to post some brief news.

How many people in the world know that in Thailand we celebrated our New Year's Day in mid April?? Yes, according to our calendar, not only in Thailand but also in Burma, Cambogia and Laos, April 14th is the beginning of the year! We call it "Songkran" which means the entry of the sun into any sign of the Zodiac. From 13th to 15th are regularly natinal holidays. As tradition, people go home to celebrate with their family. We have a partucular and funny festival. Everywhere people splash water to each other, no one minds to get wet. Tourists too enjoy to play with the Thai's. It's really a pleasure as water helps cooling down the temperature (it's the hottest month of the year).

Moreover, there're some Buddhist rites in temples and traditionally we pay respect to the oldest family members or the olderlies in the villages so as to be blessed by them.

At Rome, the abbassy of Thailand certainly set up a celebration for Thai people in Italy. This year, it's quite special for me because a Uni friend of mine came to visit Italy. I and other 3 Uni friends (who stay in Itlay for work, another one for family like me and the last one for a study) all met at Milan. We did had a great day on the Songkran Day.

Before leaving, I just wanna show our gorgeous orchid flower. This's the 1st time we reached out to save an orchid plant!

Let's eat asparagus!!

I just read a very interesting article about the "asparagus cure" and found it worths sharing. The text below is being copied from a forwared e-mail I've got from one of my dear friends, I'm not writing it myself.

Asparagus -- Who knew ?
From a friend –

My Mom had been taking the full-stalk canned style
asparagus that she pureed and she took 4 tablespoons in
the morning and 4 tablespoons later in the day. She did
this for over a month. She is on chemo pills for Stage 3
lung cancer in the pleural area and her cancer cell
count went from 386 down to 125 as of this past week.
Her oncologist said she does not need to see him for 3
months.


THE ARTICLE:

Several years ago, I had a man seeking asparagus for a
friend who had cancer. He gave me a photocopied copy
of an article, entitled, Asparagus for cancer 'printed in
Cancer News Journal, December 1979. I will share it
here, just as it was shared with me: I am a
biochemist, and have specialized in the relation of diet
to health or over 50 years. Several years ago, I learned
of the discovery of Richard R. Vensal, D.D.S. that
asparagus might cure cancer. Since then, I have worked
with him on his project We have accumulated a number

of favorable case histories. Here are a few examples:


Case No. 1,
A man with an almost hopeless case
of Hodgkin's disease (cancer of the lymph glands) who
was completely incapacitated. Within 1 year of starting
the asparagus therapy, his doctors were unable to
detect any signs of cancer, and he was back on a
schedule of strenuous exercise.

Case No. 2
, a successful businessman 68 years old
who suffered from cancer of the bladder for 16 years.
After years of medical treatments, including radiation
without improvement, he went on asparagus. Within 3

months, examinations revealed that his bladder tumor
had disappeared and that his kidneys were normal.


Case No. 3,
a man who had lung cancer. On March 5th 1971, he

was put on the operating table where they found
lung cancer so widely spread that it was inoperable.
The surgeon sewed him up and declared his case
hopeless. On April 5th he heard about the Asparagus

therapy and immediately started taking it By August,

x-ray pictures revealed that all signs of the cancer had
disappeared..
He is back at his regular business routine.


Case No. 4,
a woman who was troubled for a number of
years with skin cancer. She finally developed different
skin cancers which were diagnosed by the acting
specialist as advanced.. Within 3 months after starting
on asparagus, her skin specialist said that her skin
looked fine and no more skin lesions. This woman
reported that the asparagus therapy also cured her
kidney disease, which started in 1949. She had over 10
operations for kidney stones, and was receiving
government disability payments for an inoperable,
terminal, kidney condition. She attributes the cure of
this kidney trouble entirely to the asparagus.


I was not surprised at this result, as `The elements of
materia medica', edited in1854 by a Professor at the
University of Pennsylvania , stated that asparagus was
used as a popular remedy for kidney stones. He even
referred to experiments, in 1739, on the power of
asparagus in dissolving stones. Note the dates!
We would have other case histories but the medical
establishment has interfered with our obtaining some
of the records. I am therefore appealing to readers to
spread this good news and help us to gather a large
number of case histories that will overwhelm the
medical skeptics about this unbelievably simple and
natural remedy.


For the treatment
, asparagus should be cooked
before using, and therefore canned asparagus is just
as good as fresh. I have corresponded with the two

leading canners of asparagus, Giant and Stokely, and I
am satisfied that these brands contain no pesticides or

preservatives.
Place the cooked asparagus in a blender and liquefy to
make a puree, and store in the refrigerator. Give the
patient 4 full tablespoons twice daily, morning and
evening. Patients usually show some improvement in
2-4 weeks. It can be diluted with water and used as a
cold or hot drink. This suggested dosage is based on
present experience, but certainly larger amounts can do
no harm and may be needed in some cases. As a
biochemist I am convinced of the old saying that `what
cures can prevent.' Based on this theory, my wife and I
have been using asparagus puree as a beverage with
our meals. We take 2 tablespoons diluted in water to

suit our taste with breakfast and with dinner. I take

mine hot and my wife prefers hers cold. For years we
have made it a practice to have blood surveys taken as

part of our regular checkups. The last blood survey,
taken by a medical doctor who specializes in the
nutritional approach to health, showed substantial
improvements in all categories over the last one, and
we can attribute these improvements to nothing but
the asparagus drink.
As a biochemist, I have made an extensive study of all
aspects of cancer, and all of the proposed cures. As a
result, I am convinced that asparagus fits in better
with the latest theories about cancer.

Asparagus contains a good supply of protein called
histones
, which are believed to be active in controlling
cell growth.. For that reason, I believe asparagus can
be said to contain a substance that I call cell growth
normalizer
. That accounts for its action on cancer and
in acting as a general body tonic. In any event,
regardless of theory, asparagus used as we suggest, is
a harmless substance. The FDA cannot prevent you
from using it and it may do you much good. It has
been reported by the US National Cancer Institute, that
asparagus is the highest tested food containing
glutathione
, which is considered one of the body's
most potent anticarcinogens and antioxidants.

Come cucinare il tofu / How to cook yummy tofu

Ormai il tofu è diffuso anche nei paesi occidentali come Italia, ma a volte sento delle persone che lo hanno provato ma non lo hanno gradito. Mia suocera mi ha raccontato che anni fà (quando non c'ero ancora io) mentre doveva seguire una dieta rigorosa, ha comprato questo famoso tofu. L'ha spalmato su una fetta di pane al posto di formaggio e da quella volta non ne ha mai più comprato dato che l'ha trovato sgradevole....e ci credo!!!

Esistono molti tipi di tofu. Una mia zia thailandese, di origine cinese, vende tofu e latte di soia fatti in casa ogni mattina al mercato dove abita. Il latte di soia in commercio qui non va neanche un pò vicino a quello che bevevo da freschissimo a Bangkok. Ha un altro sapore ed altro odore.

In Asia, abbiamo tantissimi prodotti alimentari di soia. Posso dire che la soia consiste nella nostra dieta quotidiana. Stasera ho cucinato il tofu per me e mio marito. Una mia amica thailandese che mi segue anche qua aveva postato questa ricetta in spagnolo (sta studiano in Spagna) nel suo blog e così mi è venuto in mente di postarla anch'io per i miei lettori italiani : ) Io però non metto nessun tipo di carne, quindi è un piatto vegetariano (perfetto per mio marito!)

Gli ingredienti:
1 confezione di tofu
1 spicchio d'aglio
2-3 carote
1 scatola di piselli
4-5 fughi shiitake secchi (mi sono rimaste in casa solo 2)
1 cucchiaio di amido di mais
3 cucchiai di salsa di soia
un pizzico di pepe
olio vegetale

Come preparare:

1. Mettete i funghi Shiitake secchi in amollo (acqua fredda) per mezz'ora.
2. Tagliate il tofu a fette alte circa 1 cm.
3. Tagliate le carote a fette sottili ma non troppo sottili.
4. Prendete i funghi, strizzateli e tagliateli a strisce

5. Friggete il tofu (ho usato l'olio di mais) circa 3-4 min. al lato e poi lasciatelo da parte.
6. In una padella mettete poco olio (il tipo che preferite) e mettete aglio tritato. Usate il fuoco medio.
7. Unite le carote e funghi nella padella, lasciateli cuocere per circa 8-10 min. girando ogni tanto ed aggiungendo qualche cucchiaio d'acqua calda.
8. Versate i piselli nella padella, lasciate cuocere ancora per 3 min.
9. In un bicchiere mescolate 1 cucchiaio di amido di mais e 2 cucchiai d'acqua.
10. Versate l'amido di mais nella padella e lasciate cuocere ancora per un paio di minuti. Questo è per addensare l'acqua nella padella.
11. Aggiungete 3 cucchiai di salsa di soia salata ed un pizzico di pepe, mescolate e versate il contenuto sopra il tofu fritto. Ora ottenete un piatto di tofu ricco e gustoso!
Servitelo con il riso cotto al vapore come un piatto unico!

Per mio marito che non mangia cibi fritti, ho bollito il pezzo di tofu per qualche min., l'ho tagliato a fettine e poi ho versato sopra altri ingredienti. E' ottimo anche in questo modo.

Spring is in the air

Since one week ago, I haven't been fine. Firstly I had got a terrible pain in my back and left shoulder. I could hardly move for 2 entire days, it was badly painful. Then I caught the symptoms of hay fever, yes it's spring! I had been caughing unceasingly day and night. I found a syrup of my son in the cupboard, so I had it for several times and finally I went to see the doctor. I used to begin to take the antihistamines in mid April each years but this year I have to start it this early!

Today I went to visit a friend of mine who lives in the town next to mine. It's a countryside where there are cultivated fields and industries, the ones next to the others. Many houses own cherry trees and they're now flowering all together. I love the cherry blossoms very much (as you can see from my page background!). I took a photo of one which stands proudly in front of a house. This is awesome and I just think why can't we have a gorgeous one like this?!


Well, I feel a bit exhausted (which is the side effect of the medicine and may be the first warm sunny days as well). My family and friends at Bangkok told me that they're having such a weird weather. It's incredibly cold down there, about 13-15 °c instead of 35 °c as it should be in this period. April is normally the hottest month of the year but they're afraid they may have so few degrees. There're uncommon floods in the South of Thailand at the moment. The earth is changing in an unexpected way, so we must learn to keep up with the circumstances.

Involtini Vietnamiti, piatto adatto alla stagione estiva!

La cucina vietnamita è molto diffusa in Thailandia e mi piace molto. I loro piatti sono ricchissimi di verdure, sono leggeri ed ottimi per mantenersi in linea! Vi presento "Gli Involtini Vietnamiti": è un antipasto che però può sostituire un pasto se si vuole stare leggero. Cominciamo senza perdere tempo!

Per preparare gli involtini ci occorrono:

- le gallette di riso (Rice Paper) che si trovano nei negozi alimentari asiatici.
- insalata a foglia larga, carote, cetrioli, germigli di soia, menta, basilico, gamberetti e surimi


Lavate le verdure, tagliate le carote ed i cetrioli a bastoncini sottili. Fate bollire i gamberetti sgusciati per alcuni minuti e cuocete i surimi sulla piastra solo 1 1/2 min. ogni lato o scaldateli in forno a microonde per circa 45 secondi. Lasciate raffreddare i gamberetti ed i surimi.


Mettete una galletta di riso in acqua calda ma non bollente per circa 2 minuti, poi prendete la galletta che ora è diventata flessibile. Posate la galletta sopra un' asse di legno. Mettete 2 foglie d'insalata sulla galletta, poi le catore e cetrioli tagliati, i germigli si soia, 2 foglie di menta, 1-2 foglie di basilico ed infine 2 gamberetti / 1 bastoncini di surimi.



Piegate la galletta come vedete nella foto e fatela rotolare tenendola un pò stretta nel modo che gli ingredienti dentro non cadano e che la galletta si chiuda bene. Ripetete la procedura per ogni involtino.

Per preparare la salsa da accompagnare ci occorono:

1 spicchio d'aglio, 1-2 peperoncino/i piccante/i, 1 cucc.no di sale, 1/2 tazza di aceto di riso (potete sostituirlo con succo di limone diluito con l'acqua), 1/2 tazza di zucchero fino, 1/2 tazza di carote a striscioline sottili.


Frullate o tritate l'aglio e peperoncini. Mettete tutti gli ingredienti in un tegamino e fate bollire sul fuoco lento per circa 5 minuti. Toglietelo dal fuoco e lasciate raffreddare la salsa.


Tagliate a metà in diagonale ogni involtino e metteteli in piedi sul piatto. Mettete sopra la salsa e sono pronti da servire! Il piatto che ho preparato è per 2 persone come antipasto. Ho preparato gli involtini con pesci ma vanno benissimo anche pezzi di prosciutto cotto o fette di porchetta. Al posto della salsa che ho preparato, va bene anche la salsa agro-dolce o agro-piccante che trovate in vendita.

Un' uscita in compagnia @ Lago D'Iseo


Giovedì 17, festa del 150° compleanno della Repubblica Italiana, siamo andati al Lago D'Iseo, situata tra la provincia di Brescia e Bergamo. Questa uscita è stata programmata con la famiglia di Tommy, il miglior amico del nostro bambino Dylan, da autunno scorso ma è rimasta in attesa...e finalmente c'è stato quel giorno di festa e ne abbiamo approfittato!

Il tempo non era ottimo, cielo coperto con un pò di pioggia che rendeva non tanto allegra l'atmosfera di lago ma siamo stati bene in compagnia, soprattutto i bambini si sono divertiti un sacco. Ci siamo fermati alla trattoria Glisenti a Marrone. Abbiamo mangiato benissimo!! Tante portate di pesci di lago. Mi piaciono molto questi assaggini ;-D Ho fatto 3 foto dei piatti primi e secondi.

3° foto: Polenta con grano saraceno con il pesce di cui non ricordo il nome, perdonatemi! (Elena, puoi aiutarmi lasciando dei dettagli dei cibi nel commento se vuoi ;-P )

Abbiamo concluso la giornata con una passeggiata nel paese. Una giornata divertente direi!
