Stir-frying anything in a wok!

This evening I'd like to talk about food. I love trying various kinds of food, both Oriental and Western ones but I try to avoid too cheesy dishes and I don't prefer food based on flour such as pizza just because I feel too empty as if I'm leavened by yeast. I normally cook Thai, Chinese and Italian dishes alternately. Lately I've also learnt to make the Japanese sushi (using smoked Norwegian salmon instead of raw fish), the Vietnamese spring rolls (they're different from the Chinese fried spring rolls!), and the Corean pork roast and kimchi. My son loves Italian spaghetti and pizza, however he eats Chinese spaghetti and Japanese sushi as well. When we stayed in Thailand on holidays, fortunately he didn't have any difficulties in food.

We, Chineses and most Asians, stir-fry anything in a wok. My mother-in-law is used to see me cooking my quick-to-do dishes and she often asks: "Do you stir-fry everyghing?" and I say "Yes, I do!". This technique is very useful when you want to clean up your fridge or when you have a little bit of everything left in the fridge. This Chinese way of stir-frying is called "Chap-chai"; that means "mixed vegetables". I'm letting you see my Chap-chai dish made 2 days ago.

First of all, collect all you want to put in the wok, such as various kinds of vegetables, meat, mushrooms, ect. Wash and slice them into pieces. Begin with warming 1-2 spoons of vegetable oil and fry chopped garlic. If you have meat (chopped pork, chicken, etc) put it after the garlic. This time I didn't use any kind of meat.

Then put each kind of vegetables, one after another in the wok, on medium-high fire. Stir them quicklly. I used what I found in the fridge: spring onions, carrots, daikon, a kind of green leaves (I don't know how to call it) celery and champignon mushrooms.

Add 1 spoon of sweet soy-sauce. It's a dark and thick sauce which gives sweet flavor.

Then add about 2 spoons of clear soy-sauce which gives salty taste and at last a pinch of pepper. Sometimes I also put some coriandro. Usually I use dried Chinese mushrooms but I didn't soak them in time as I hadn't planned it before. Only 10 minutes are needed and voilà!

Serve it with hot steamed Thai rice ;-) You can use other kinds of vegetables too. Savoy cabbage is perfect in the wok! Remember not to continue cooking for much time because the ingredients should retain texture and flavor.

At the end, I introduce my sauces, perhaps non-Asian readers may be interested to use them. They could be found in common Asian supermarkets and on-line Asian food stores.

From left to right: Seasoning Soy Sauce, Sweet (dark) Soy Sauce and Chinese Mushroom-flavored Soy Sauce.

The happiness of Nanà

After introducing our kitty Nanà in the previous post, I'd like to talk more about her. The title of this post, as my Thai friends must have recognised, is intended to immitate one famous Thai movie's name: The Happiness of Kati However, there's nothing to do with the movie, I only would like to make it sound a little bit "fashionable" and this article is going to tell about the daily "happiness" and "unhappiness" of Nanà.

I've to describe her habits and attitudes towards us and strangers. She's usually sweet, cuddly and playful with our family members but she becomes timid, fearful and nervous when there's a presence of a non-family person. Acually she's easily frightened by any noises and she hides herself in a closed place such as under the bed or wardrobe. From my knowledge (by reading), this's normal. Cats don't stand loud sounds and they try to avoid them. Nevertheless, Nanà is frightened by only some little sounds, especially unexpected ones.

Moreover, Nanà doesn't like visitors. She's not one of those cats that love being caressed by people (naturally except us!). One rather funny thing is that; when she hears the doorbell, she suddenly runs to the house main wndow door, moves the curtain by her paw to find out who's there and if she sees a stranger (non-family member) she takes off as a plane and you won't be able to find her! We initially hoped that she would be able to get used to see strangers one day, but we already lost the hope! Sometimes when the guests stay for some hours, she comes out to see in a safe distance, people can see her in only these few minutes because she disappears again untill the guests are gone.

I and my husband sometimes asked ourselves why Nanà is afraid of people and so many things. We immagine that probably she might have suffered during her first months at her original house. We remember the day we went to take her home. The other 2 of her siblings were double-sized of her. We then thought she could be the weakest of all the kittens. Who knows if the farm owner gave her away for this reason! Perhaps we saved her life bringing her with us!

A moment in summer when Dylan & Nanà enjoyed outdoors.
(Nanà seemed not to be that happy in the way her buddy held her!)

In summer, Nanà loves going out to lay on the lawn, to have some grass and to scratch herself on the rough pavement. She used to meet some other cats that came into our garden. We kept an eye on them to see the reactions. The one and another kept some distance and didn't move. They looked at each other and mostly another cat went away. Once I saw Nanà inflated (I don't know which term is suitable here) herself in order to threaten another cat, letting out a weird cry at the same time. She might not feel safe and tried to defend herself. I went out to see and the other cat escaped away. Since then, we watch her often when she stays outside the house. We'd be diappointed if the cats fight against each other. Well, now we even became cat-sitter/guard!

At the conclusion, I think I can say that Nanà is a lucky kitty. She has a spacious house to live in, she can sleep wherever, she has a fairly large space outdoors, and especially she has a warm family to depend on.

Why a cat?

Around lately July or early August (forgive my poor memory!) of 2007, we brought a new member home. It was a female cat, purebred Sacred Birman, born on 7th May, 2007. Sincerely I had never known nor heard about the existence of this breed before. I had even never immagined I could be able to love a cat either! In my childhood, my family owned a dog. As I remember, I didn't like cats because the look in their eyes scared me a little bit. There were several stray cats in my living zone (my parents' house at Bangkok). I refused to approach or touch any cats just because I felt they were not so friendly. Therefore cats were "scary" and "hostile" for me.

Well, the idea to get a pet comes to your mind sooner or later, especially when you've kids. Truly it was my husband, Francesco, who proposed one day the question: "Why don't we get a puppy?". He suggested it should be time to give Dylan, our only son, a pet to keep him company. It's said animals do good to children, perhaps he was right, I thought, although I wasn't that convinced.

At first, he thought of a dog. He was pretty interested in the golden retriever, well-known for its attractive characteristics. I would be great but I wasn't so certain of the idea. Well, who would bring it to pee in a freezing winter morning, perhaps at 6 a.m.? I was so sure the responsibility will become mine, thus I should prevent it before it cuold happen! (We share the same house, court and garden with my in-laws and they'd never accept a doggie's pee and poo in the house's gate.)

After this argument, Francesco looked at many websites to find something to convince me and he somehow came across a web page that told about a cat breed which is rare. He suddenly felt in love with those kittens after reading their story and looking at the pictures. He came to the conclusion that no one needed to bring it outside in a cold morning (of which I was afraid). A cat is less dependent than a dog, we immagined. From the pictures, they were just adorable, like little cotton flocks. The Sacred Birmans are not easily found in a pet shop. They're reservedly bred in farms, that are not available in many places. The nearest one we found in the websites was the Albafeles, in the province of Pavia. Francesco contacted the owner by phone and she invited us to see the cats at her place. We brought Dylan, 6 years old at that time, to visit the farm the soonest. It was the first time I saw cats as attractive and friendly creatures! The bigger ones came near us, they wanted us to hold them and they were very soft! That was my feeling. Dylan too was enthusiastic. Well, we just simply loved them. The owner kindly explained the Sacred Birmans' characteristics, their habits, how to take care and she assured us that these cats were very friendly and playful. Well, we had had the experience from the visit.

After one month of waiting, we got the call from the farm owner that the new kittens were born and we could go to see them. Only one of the three new-born kittens was to be given away. It was female, seal point coloured, and it was just too adorable. Yes, we decided to take her but the owner didn't want to seperate the kitten from its mother too soon as it was still eating from breast. We had to wait for almost 3 months and then it was done!

Nanà, the 1st time we visited her.

Dylan was glad to get near his kitten.

                                                          They were getting more confidence.

Finally Nanà came to stay with us, she was inseparable from Dylan.

Do you speak Chinese?

The question people asked me most frequently during these eleven years of my life in Italy is: "Are you Chinese?". Obviously my aspect says that I'm more or less Chinese. Moreover, Italian people aren't able to distinguish well the particulars of facial aspects among different Asian nations. They often think only of China and Japan.

Judging from my eyes' shape, people think I'm Chinese with no doubt. Even Chinese ones greet me in Chinese. Several times at the train stations, Chinese people who might not speak Italian came to me speaking a lot in Chinese but I had to reply them "I'm sorry, I don't speak Chinese", leaving them disappointed because they were looking for someone to ask for help. When I enter any Chinese groceries for the 1st time, the shopkeepers looked into my eyes and they had an expression like they doubted if I was Chinese and I returned an expression in my face like saying that I was not. I found no need to tell them that I'm Chinese when I don't speak the language, and have never been to the country either. However, in the Chinese restaurant where I and my husband frequented in the first year of my arrival, the waitress told me that I had the cantonese accent when I spoke. I said "well, I'm Cantonese indeed."

To the question: "Are you Chinese?", generally asked by the Italian, my answer isn't always "Yes" or "No". It depends on the situation. For those who don't know who I'm but they talk to me only to exchange some words in a local or a supermarket and very probably I'll not meet them again, I just simply say that I'm Thai. Many people know Thailand by beautiful beaches so they say: "Oh, you come from such a splendid place!". Some of them instead don't have much idea about the country, neither where it's situated. They immagine Thailand as a poor land where people live in misery catching animals and fishing as they used to see some kinds of documentaries about tribes at the Northern border of the country. Once, an old man asked me how I could contact my parents, and if they owned a telephone. Although I tried my best to describe Bangkok, where I come from, the old man seemed to commiserate about me. Well, I just let it be.

When it's a case, such as to friends, my husband's relatives, or whoever seems to be interested in knowing more about me, I like to explain my origin. It's not that complicated but to say if I'm Chinese or not, it needs a little bit of explanation. I was born at Bangkok, Thailand, so I've 100% Thai nationality. My parents too were born in Thailand and they're Thai. Both my paternal and maternal grandparents were born in China and they lived their youth there. They moved to Thailand as many Chineses did because at that time they could have more freedom in Thailand. My grannies settled down at Bangkok. They worked hard to get stability and gained Thai citizenship.

My parents and relatives always speak Cantonese among them. I understanded it fairly but never tried to speak it. My mom often told me, my brother and sister that one day we would regret not wanting to learn Cantonese. Well, she was right. Now that I forgot most of Cantonese words I feel a pity. Once an office where I applied for a job called me for an interview believing that I knew Chinese language. They said they assumed that Thai and Chinese languages would be similar. Many times my Italian friends asked me if I could translate a Chinese writing. I think that Chinese language is very difficult and I would never reach out to learn it. I once took Japanese lessons in my university but I stopped after one semester because I realised that it was not for me. I did better in European languages.

At this point. I suppose I did give a clear idea of my origin. Now I also own the Italian citizenship but I feel weird to say I'm Italian (although I use my Italian passport to travel).

The first day of the year

First of all, HAPPY NEW YEAR 2011!!!
The old year has gone, let good memories follow us in the new year and leave the dull ones behind.
Don't regret too much your mistakes, but don't forget them as they're your teacher.

I just spent my first day of the new year with my family. We had an abundant lunch together, me, my husband, my kid and my in-laws. I cooked the lentils because the Italian believes that lentils bring money, so we had had a full bowl of them! If I had been with my mother, she would have bought me a new t-shirt or something new to wear because the Chinese believes that they should wear a new piece of clothes to make a good start of the year. Well, I just wore my new overcoat yesterday, perhaps I should have worn it today! However, this doesn't count that much. Each folk has its own beliefs because it's a kind of mental support.

Our first guests of the year who came to visit us are an old friend of my father-in-law and his wife. They're very kind and nice. I knew them for the first time a little bit before my first Christmas in Italy. My little child was still a baby. They invited all our family at their restaurant the day after Christmas (Santo Stefano's Day). That Christmas I had another good memory; that is my dear friend who came to stay with me during her holidays. She was studying in France. It's been 10 years ago.

I spent my New Year's day with a good company. It's a good start because we caught up so many things (the last time we met was few years ago) and we've laughed a lot :-D

That's all for now. Another (extra)ordinary day of mine is going to finish.
